Gain an understanding of how salt has provided immense wealth to Ibiza for centuries and enjoy a gourmet meal in one of the premier restaurants in Old Town. For a historical perspective of how salt has long been extracted from the ponds at Las Salinas on the island’s southern tip, you will browse the Sant Francesc Interpretation Center. The exhibits depict in fascinating detail how salt was once manually extracted, a time-consuming process that is now mechanized. One of the primary uses for the salt was to preserve fish, especially cod in northern Europe. You will likely dine on a traditional fish dish in Club Nàutic Eivissa, the second-oldest yacht club in the Balearic Islands. The restaurant overlooks the harbor, which developed around the salt industry. During free time in the surrounding area, you might shop in the fashionable boutiques and see the 16th-century walls built to protect Old Town.
